Tour Asia @ NECI on Main

NECI Dining Beginning January 14, NECI on Main will tour the cuisines of Asia with the students in their International Flavors class. The class is taught by chef Cameron Moorby, owner of the Thrush Tavern and former sous chef to Steve Bogart at the critically acclaimed Chinese restaurant A Single Pebble. Students will use traditional techniques to produce meals representative of Asia with a particular focus on China. The core menu is below, but go on tour with us every week to explore the flavors, specific ingredients, and essential characteristics of each region. Appetizers Cold Sesame Noodles personal sized nest of chilled lo mein noodles with a sesame peanut sauce, julienne cucumber and scallion Szechuan Cucumber Salad shaved cucumber tossed in a slightly spicy soy and garlic dressing Shredded Chicken Salad poached and chilled strips of chicken on a bed of mung bean sprouts, drizzled with a choice of peppery Lai Yu or Sesame sauces Entrees Dry Fried Asparagus bite sized chunks of s… Campus Location: NECI on Main. Growing Rice in Central Vermont - Sjon Welters

Growing rice in Central Vermont - Sjon Welters Growing rice in Vermont is possible and you can do it, too. Come hear Sjon Welters, of Rhapsody Natural Foods, speak on how he has grown rice over the past 6 years and find out the details on rice cultivation - from a simple bucket to paddy-style. Sjon Welters started off growing rice with 30 seeds he'd gotten during a rice growing workshop at a NOFA conference 7 years ago. Easter Candy Class

Public Events Chef Instructor Michelle Buswell will be teaching us how to make an assortment of Easter Candies this Saturday at the La Brioche Classroom in City Center! This two hour class is a hands-on instruction and will be the perfect way to make your Easter baskets look incredible. The cost is $45. Reservations are required. Bolton After Dark -$19 lift tickets

Student Services Date: Mar 21 2015 What kind of neighborhood doesn't have a party on Saturday night? At Bolton, we invite all our friends and family (and yours too!) to come night skiing for just $19 every Saturday evening, starting at 4pm. Start your evening off by skiing and riding on Vermont's most extensive night skiing terrain. Once you're properly exhausted from countless laps out on the hill, join us at Fireside Flatbread from 4-8 p.m. and we throw a mini-party complete with skiing and riding for all ages, food and drink specials and a public screening of a ski movie by Meathead Films, a local film studio based in Williston, VT. It's the best way to relax and unplug after a long week and a leg-burning day on the slopes. Stay tuned! Meathead Films Schedule will be released as we get closer to Opening Day. Volunteer for Monteverdi Music School Fundraiser

Student Services The Monteverdi Music School is holding a fundraiser featuring a dinner buffet and live music.  Students will help set up a buffet that flows well and will adequately serve up to 100 guests.  Students will assist with keeping food stocked, maintaining appropriate temperature and ensuring it is kept tidy and organized.  IF there are enough students, assistance will be needed to set the dining room (table clothes, centerpieces, etc.) .  Contact jennifer.livingston@neci.edu if you are interested in volunteering. Sous Vide Dinner

On April 25, following an intense 3-day sous vide certification course, co-instructor and Executive Chef Jean Louis Gerin will delight us at NECI on Main by hosting a seven course dinner featuring a menu dedicated to this modern cooking technique.
