NDFS Seminar: High Flavanol Chocolate Milk: An NDFS Collaborative Project

USU Dietetics students in partnership with the Aggie Chocolate Factory and Aggie Creamery created a high flavanol chocolate milk for athletes to aid in muscle recovery and cardiovascular health. The project included use of Barry Callebaut high flavanol cocoa power to increase flavanols in the Aggie Creamery chocolate milk recipe. Dietetics students then conducted formal sensory evaluations of the milk with USU athletes to assess their likeliness of choosing this product. The project provided students with hands on experience creating a product with added nutritional benefit.
